Once a kitchen is sending more than a few hundred covers a day, the undercounter machine becomes the bottleneck and the wash-up moves to a hood. The operator loads a rack on one side, drops the hood, and pulls it clean off the other side — a continuous line rather than a door that has to be opened and emptied.
The HK 850 runs 60 racks an hour on the short cycle and clears 425 mm of wash height, so stock pots, gastronorm containers and tall service ware go through the same machine as the plates. Triple water filtration and a self-cleaning vertical pump are what let it hold that pace without a mid-service strip down.
It needs a three-phase supply and a properly planned wash-up layout — dirty in, clean out, no crossing.
