A modular ice maker is the right answer once daily demand passes what a self-contained machine can hold. The head sits on top of a separate storage bin, so production and storage are sized independently and the bin can be scaled up later without replacing the machine.
Ice is formed by a continuous jet of water flowing down a vertical stainless steel evaporator, which produces a hard, clear, slow-melting cube rather than the cloudy hollow cube a spray plate gives. The machine makes three cube weights — 6, 10 and 17 grams — so the same unit serves a cocktail bar, a soft-drink dispenser and a fish counter.
At 450 kg over 24 hours this is hotel, nightclub and banqueting capacity. Pair it with an ST S 200 bin for 181 kg of storage or an ST S 400 for 400 kg.
