An undercounter machine is the standard answer for a bar, a café or a restaurant washing glassware and plates in a fixed corner of the service area. This one takes the full 500 x 500 mm rack, which is the size most kitchens already own, so existing baskets carry over.

Four cycles cover the range of work: 90 seconds for glassware coming back clean, 120 and 180 seconds for plates, and a 9 minute cycle for pans and anything that has sat. At 40 racks an hour on the short cycle the machine keeps pace with a full dining room, and the 340 mm wash height clears tall glasses and gastronorm inserts.

Control is electronic rather than a mechanical timer, which matters for consistency — the rinse holds its temperature instead of drifting with the tank.
